Ingredients:

  • 1 pack of Bauer Junior Mix
  • 1 small onion
  • 1 large or 2 small chicken thigh fillets
  • 2 teaspoons curry paste
  • 1/3 cup basmati rice
  • 2/3 cup chicken broth

Recipe:

Heat the oil in a pan, then fry the onion for 5-6 minutes until softened. Add the chicken pieces and fry for another 2 minutes until lightly browned. Then, stir in the curry paste and rice and cook for 1 minute. Pour in the chicken stock and add any larger pieces of frozen vegetables. Bring to a boil, then reduce the heat and cover the pan with a lid. Cook for 10 minutes, then add the remaining vegetables. Sprinkle the spinach on top, cover again, and cook for another 10 minutes until all the stock is absorbed and the rice is tender. Give everything a good stir, season to taste, and serve. Enjoy! 😊
